A unique historic site in Chinon
Dug out as early as the 10th century beneath the royal fortress of Chinon, the Caves M Plouzeau offer an exceptional underground setting in the heart of the Loire Valley. A true testament to Chinon’s heritage, this network of troglodytic galleries is part of a long tradition of quarrying tuffeau, the region’s iconic stone. Located at the foot of the Moulin tower, at the western end of Fort du Coudray, these cellars enjoy a unique location steeped in history, where the cultural legacy of Rabelais still resonates.
Two remarkable shafts connect the cellars directly to the fortress, highlighting the ingenuity of medieval architecture. The first, a former extraction shaft, bears witness to the work of the quarrymen who carved out these galleries. The second, which still holds water, reaches an impressive depth of 96 metres, enhancing the spectacular and authentic character of the site. This timeless setting lends the cellars an atmosphere that is both mysterious and fascinating.
Wines aged under ideal conditions
The Caves M Plouzeau is an ideal location for ageing Chinon wines, thanks to its perfectly suited natural conditions. A constant temperature of around 12°C and stable humidity throughout the year allow for the slow, steady and optimal ageing of the wines. This stability promotes the development of aromas and the refinement of tannins, essential elements for the quality of the great wines of the Loire.
In this unique setting, the wines of Château de la Bonnelière are carefully aged in demi-muids for a period of 12 to 36 months. This meticulous ageing process allows the wines to develop greater complexity, depth and elegance. Aromas of ripe fruit, spices and woody notes gradually harmonise, resulting in balanced, authentic Chinon wines that are true to their terroir.
